From Harvest to Barrel: The Craft

Hand-selected grapes, gentle fermentation, and patient ageing — the craft behind every bottle of Casa Blaví.

The Harvest

Grapes are hand-selected at perfect maturity — black fruit, spice, and velvet ready to become wine. Our pickers walk the rows at dawn, when the cool morning air preserves the delicate aromatics. Each cluster is inspected; only the finest reaches the cellar.

Fermentation

The grapes are gently destemmed and crushed. Fermentation proceeds slowly, at controlled temperatures, allowing the extraction of color, structure, and aroma without harshness. Pump-overs are kept gentle — we seek elegance, not force.

Ageing

The wine is transferred to French oak barrels, where time refines the tannins into a broad, velvety palate. Depending on the cuvée, the wine rests for months — absorbing the subtle spice and toast of the wood, its structure deepening with each season.

The Finish

The result is a Carménère with elegant tannins and a long, contemplative finish that invites reflection. This is not just a wine. It is a ritual.
